Veggie overkill fried rice

Yes, this would be my first blogpost in English. Which should be celebrated. Everywhere the All you can eat Sushi restaurant are opening their doors. Fried rice is almost always on their menu. But ofcourse not with a lot of vegetables. So that is why was about to try to create an veggie overkill recipe. I try to make this recipe for 2 people, but after making it…. i would say it is enough for 6 hungry people. Or just 2 that want to eat this the whole week.

Ingredients ( for 6 healthy hungry people)

  • 1,5 cup of rice
  • 5 small carrots (cutted in small pieces)
  • Cup of peas (frozen)
  • Cup of corn (frozen)
  • 1 pepper
  • ¼ broccoli
  • 1 small union
  • 1 toe of garlic
  • handfull of beansprouts
  • 3 eggs
  • Soya sauce
  • (extra by choice fried chicken pieces)

To start …. first boil 3 liter of water and add the rice when the water is boiling for mostly 10 minutes. In the meanwhile you can cut all the ingredients which are mostly all the happy coloured veggieessss!.

Hey did you check the rice? Is it ready yet? Than get rid of the water and put the rice aside. To fry all the veggies is the next step. We start with the garlic and the unions with some (coconut) oil. Next up is all the other veggies except for the peas, corn and the beansprouts. Fry this all on high fire so all the tastes get mixed and then after 5 minutes or so you can add the rest of the veggies. And than it is time to fry the eggs.

What I do is……. make a hole and put some oil there. Break the eggs in the hole and start to mix the eggs.

One suggestion. It is easier to do this one by one egg instead of all together.  If you like to add some chicken next to the veggie overkill. This would be the sime to add the chicken. I fried the chicken before with some honey and soyasaus and peper/salt.

Yeaaaah finallyyy time to add the rice. If you find out that it is a lot of food to handle..(like me) than it is probably a great idea to use an extra pan to fry everthing. Put some rice in the pan and add some veggie-mix with it. Fry this on high fire for about 5-7 minutes. After to mixed all the rice and veggie together it will be time to serve!

Woaaaahww so much veggiessss I would not expect to see this in one meal, but yeah it is possible. Enjoy and keep in mind to have had enough vegetable for the whole month.
