Very fresh Tomatosoup with tortelini
(2 people maindish, 4-6 people starters dish)
- 1 kg Tomatoes
- 5 shallots
- 2 garlic parts
- 1 tablespoon sugar
- 2 tablespoons olive oil
- Italian spices ( rosemary, thyme, basilica)
- Portion tortellini
- 3 spring unions
We all need some vitamins especially during the winter. I have to say where I live there no winter yet, but I expect it soon. Tomatosoup is a favourite soup for almost everyone, but the say I made this one is not the way people normally make tomato soup. So stay put and read on.
Yeah we start with the oven. (you probably think, why the oven just cook the tomatoes, crush them and there is the tomatosoup…. I am sorry this is not how it is prepared today) So get the oven ready for a temperature of 200 degrees Celcius. Choose a large bakingdish and get ready to cut some tomatoes. Cut the tomatoes in half or cuarters (you may choose, this time). The same for the shallots. Add the garlic as well. Time for the topping. Always the best part of preparing dinner, because you can variate endless with spices and the tast will be always different. I use some sugar to compete with the sprong power of the garlic and shallot as well for some sweetness.
So time to finish the topping with the spices which includes peper, salt, rosemary, thyme and de oil. And get ready to chill for 45 minutes.
If you cannot sit still… you are always invited to mix the tomatoes once or twice during the baking.
Let’s prepare for making real soup out of this real fresh tomato mixture.

It looks already more like soup than it did some secons before. That is a start. Mix it a little bit longer and it will be fine. If the soup is to thick….(it probably is..) than add around 250 ml vegetable bouillon.
Look at that, it is soup and it smells good and more important very healthy. To make a real meal out of this soup you can add the fresh tortelini after you cook them for about 4 minutes.
Time to eat!!!, serve the Tomatosoup with some spring union rings and some bread.
